Sunflower seeds hummus

DSC_0161Some of my favourite recipes are saved from the time when I was extremely into raw food. Some years ago I just discovered this diet and got really into it, however, three months later (it was November two years ago), I just quit the fully raw thing because of two reasons:

  1. In Lithuania, in winter time, all raw food options is everything you dried yourself in summer (and I wasn’t ready), or fruits – oranges, bananas, grapes, I mean, nothing local. So eating raw it is not winning here at all.
  2. I felt alone in this – nobody around understood or supported me.

However, even though I do not eat only raw food, I try to incorporate as much non- processed food in my diet, as I can. My favourite raw food dish of all times is sunflower seeds hummus.

For the hummus:

2 cups of soaked sunflower seeds
1 red bell pepper
1 zucchini
1/2 avocado
2 garlic cloves
3-5 tbsp of olive oil
juice of 1 lemon
salt, black pepper, cumin powder for taste

Extra vegetables for serving:

3-4 big carrots
2 cucumbers
2 zucchinis
red bell pepper

Tools:

Chop the vegetables in chunky pieces, put all the ingredients into your blender and blend until smooth consistency. Depending on how watery your vegetables are, add more oil if hummus is too thick. Serve with carrots, zucchinis and cucumbers chopped in sticks. Another way is to cut extra vegetables in slices, layer the hummus and top with some sprouts (reddish preferably).
