Cinnamon rolls

DSC_0063My grandmother used to make the best cinnamon rolls in the world and I definitely miss that smell and taste. For me cinnamon roll with milk or earl grey tea reminds me of childhood lightness, Saturdays with my cousins, reading books in hammock in taking long walks in the forest. My grandparents used to live in the cabin in the forest. Now there is no forest left there anymore – it became lived in territory with fancy houses and they are also having a street going right through my favourite playground. And swings. We had amazing swings there.  Time is running so fast and I am trying to find as many things that could stop it, as possible. Cinnamon rolls is one of them.

You will need:

1 cup of warm milk
15g of yeast
75ml of sugar
450g of flour
75g of room temperature butter
a pinch of salt
2 tsp of grained cardamon

for rolling:

50g of room temperature butter
4-5 tbsp of cinnamon
4-5 tbsp of sugar
1 beaten egg to grease

DSC_0022The process is super easy, and I like the idea, that it is no egg requiring recipe (except for greasing the to of rolls, which is optional). Mix yeast, sugar and milk together and leave for 15min or until starts lathering. Add half of your flour, mix in, then add butter and another half of flour. It may seem that there is not enough of flour, but give it a chance and knead it at least 10 mins. If the dough remains super sticky, add some flower, but I would suggest to leave the dough to raise for at least an hour and then double check if more flour is really needed. Also, some extra flour will be added during rolling the dough out, that should be enough.

Roll the dough out into square. Make sure it is no more than 3mm thick. Grease it with the butter, sprinkle sugar and cinnamon, roll into one big roll and cut in about 3cm thick slices. Grease each slice with beaten egg, sprinkle more sugar, put the into baking pan and leave to rise for 30mins. Bake into 220ºC preheated oven for about 15min.

For me baking always brings memories, and this receipt reminds me of a very special place. My wish for this Saturday is that everyone could spend more time with their family and other people they love.
