Two bruschetta recipes

DSC_0113Brushetta is one of the best ways to enjoy your breakfast, or make some quick party snacks. “Brusketa” is the classic Italian appetizer and we all know that Italians are the best at cooking! Just imagine fresh tomatoes from the garden, basil, mushrooms, garlic and a few drops of oil. Perfect combination. My wife showed me these two recipes which is really easy and quick to make.

All you need is:

2 tomatoes
1 big ball of Mozzarella cheese
few fresh basil leaves
500 g of mushrooms
1 medium onion
2 cloves of garlic
5 tbsp of olive oil
pinch of shredded parmesan
Spring onions
Ciabatta bread
salt, pepper

Cut in slices ciabatta bread. Cover with oil and garlic mix (blend the oil and garlic together)  and put in oven for 15-20 min in medium heat. Keep an eye on it till it makes a nice brown crust. While ciabatta bread is in the oven, slice mushrooms and put in the pan together with onion for mushroom bruschetta. Fry them till they make nice brown color. Chop tomatoes and mozzarella into cubes, put in a bowl and mix with salt, pepper and fresh basil. Put baked mushrooms and tomatoes and mozzarella toppings on different ciabatta breads and enjoy.
