Weekend dinner always associate with warm and calming food, sometimes fancy, sometimes very simple, but clearly homemade. As I mentioned before – we never ever buy semi-finished or frozen food (except fresh berries), so even if we have no time to prepare something time consuming we do our best. This soup definitely meets expectations: easy to prepare, rich in flavour, warming, colourful. The best part of it is that you chop all ingredients and that is it – the oven does the magic and you can do whatever you like instead of working hard in the kitchen.
For 6 servings you need:
1 sweet potato
2 bell peppers
2 cans of beans (your favourite)
1 large can of tomatoes
5-6 garlic cloves
fresh hot pepper (optional)
some oil for baking
500ml boiling water
Preheat you oven to 200ºC. Chop all vegetables into big pieces, suitable for baking in the oven. Add 1 onion and 2-3 garlic cloves on top. In the baking pan mix all vegetables, onion, garlic, some oil, fresh rosemary, salt and pepper well and put it in the oven for 25mins. While vegetables are baking, prepare the soup. Chop the remaining onion and garlic (if you are using hot pepper – chop it together) into small pieces and put into the pot with some oil. Cook until onion turns yellow, add some salt and pepper. Pour tomatoes in. (Smooth all tomato chunks with a blender first, if you find it necessary). Wait until the mixture boils, add boiling water, mix well. Add you vegetables and beans, and let the soup simmer for 5mins. Add more salt and pepper if you need.
We also sprinkle some grated cheese on top, but it is optional too.
