Gluten free banana muffins

DSC_0028Good for breakfast and as a treat. You can have one or five, doesn’t matter. Gluten free, healthy and relatively quick dessert. The recipe also have vegan version.

For 12 muffins you need:

2-3 bananas
1/3 cup of melted butter or scentless oil
1/2 of sugar/agave syrup/honey
1 beaten egg or 2tbsp of potato starch
1 tsp of baking soda
1 ans 1/2 cups of rise flour (can be mixed with fine grounded oat flakes)
pinch of salt

Add handful of walnuts, chocolate chips or anything else extra if you desire

For oat crust:

5 tbsp of oats
2 tbsp of sugar
1 tbsp of melted butter or oil

Mash bananas using a fork, no need to be precise. Mix in melted butter or oil, beaten egg. If you are using honey or agave syrup instead of sugar, mix that into bananas too.

In separate bowl pour your flour, sugar, baking soda, salt (potato starch if you are not using eggs). Combine wet ingredients and dry ingredients together, whisk well, add extra ingredients. In separate bowl mix all ingredients for crust. The mixture should look like wet powder.

Pour the batter into greased muffin tin, sprinkle oat crust on top and bake  into 175ºC preheated oven for 40-45 mins. Voila!!
