Broccoli and peanuts

I once invented this recipe by accident and I love it. The broccoli and peanuts combination is new to me, but it’s phenomenal. Coconut milk – perfect heavy cream replacement. And finally – black rice. Everyone knows black rice is much better option than white rice, but not everyone knows how to serve them. It is also really easy to put together, it takes as long as it takes to make black rice. So, to sum up – perfect and filling protein, fiber and greens combination.

DSC_0005For 4 servings you need:

1 fresh broccoli (use frozen, but it is less nutritious)
300g of green beans
handful of roasted peanuts
1 onion
3 garlic cloves
1 can of coconut milk
0.5 cup of water
salt, pepper, cumin, fenugreek, dried turmeric
3 tbsp sunflower oil

1 cup of black rice

Prepare your rice according to instructions on the package – for me it took 30mins to cook on low heat. Chop the onion, cut broccoli and green beans is bite-size pieces, roast peanuts. Heat the oil in the pan, throw in the onion and spices. Let flavours mix well, add broccoli and beans. Roast the vegetables on medium heat for about 5mins, stir attentively. Pour the coconut milk and water in, wait until everything boils and taste – add salt if you need more. Let the vegetables to stew for 5-7mins, add peanuts, leave for another minute or two. That is it!

Discoveries: Black rice. I have tried it before several times, but I learned now that to make really good black rice takes time and patience. It is not the same as white rice – make sure to save more time. Coconut milk. Amazing replacement  for heavy cream or milk in any stew.

Each day I feel more and more satisfaction in cooking. It is not only about creating something beautiful and comforting, it is also very much about doing something special for your body. In this crazy health journey I’ve truly learned that nobody else can take care of you. All the love, attention and care to your body comes only from yourself. I somehow want to do nothing else but exercise, cook and dream. That is what I was thinking about while pealing those peanuts.
