My favorite poppy seed oatmeal with apple stew

I finally started having proper breakfast everyday. I know it is healthy habit and it does make huge difference in my day, so I am glad I managed to pull myself together and try having breakfast each morning. I have to admit it took a while for me to find something I’d like more that “just coffee”, which was my sacred ritual transforming me from “morning beast” to a person. However, I am finally there. You may expect healthy(ier) breakfast recipes every now and then.

Ok, so oatmeal. Porridge always looks like baby food for me, even though I know the benefits of it. Also, now oatmeal is such a thing! Everyone is blogging about overnight oats, or regular oatmeal, so I had to try that again and somehow find a way to enjoy it. First, I have to say that cold (overnight) oatmeal is not my thing. I’ve tried it once and came up with conclusion cold oats are not for me. But I was happy to finally come up with a combination I absolutely enjoy, thanks to Fall and everything-tastes-like-pumpkin-spice thing – I was totally influenced by it.

So, here we go – Poppy seed oatmeal with apple stew.

For two servings you will need:

1 cup of oats (I prefer regular oats to flakes)
1 cup of water
1 cup of milk (I used almond milk)
handful of roasted almonds
2-3 tbs of poppy seeds
2 large apples
pumpkin spice mix or you can adjust the taste to your liking using cinnamon, nutmeg and cardamom separately
zest of half of lemon
juice of half a lemon
honey to sweeten the apples and the porridge

First, prepare the apples. Peel the skin and cut them into small cubes. And them to the sauce pan with few drops of water and let them simmer on low heat. After few minutes dd some honey (or other sweetener of your choice), lemon zest, juice and spices. I like when apples remain a little bit of texture, so I would take the saucepan away from the heat as soon as the apples are heated through, but still keep their shape. If you want smooth apple sauce, continue stewing the apples until they loose their shape and then blend them.

To prepare the porridge, add your oats, the water and the milk to a pot and boil constantly mixing until oats are done. Add honey, or other sweetener, poppy seeds and mix well. If you are fan of cinnamon, as I am, add some to the porridge too.

When serving, pour the porridge first, then add your apples and crushed roasted almonds. This is my comfort food. Bon appetit!
