Healthy apple crumble recipe

14876124_10210965256513091_1767582019_oApple pie is something I always loved and going to love forever. Warm, with vanilla ice-cream on a side.. Oh, heaven! I’ve decided to  eat healthier and choose less heavy alternatives of desserts some time ago, so apple crumble is what I satisfy my apple pie cravings. and it is amazing with coffee or tea for those chilly autumnal weekends.

I’ve tried many versions of the crumble, to make it gluten free, sugar free and dairy free, I finally mixed few ideas into one and this is the easiest way to do that, and also has the best texture (to my liking). And for the apples  – it is known that sour apples work better for pies and crumbles because they have more flavour, however, I use sweet apples, because I need less sweetener (if any) and add few frozen berries for that sour taste we all like.

So, here we go. You will need:

7-8 small apples(or 4-5 big ones)
0.5 frozen berries of your choice (I used mix of raspberries, cranberries, blackberries and blueberries)
zest of half of lemon
0.5 cup water
3 tbsp honey
2 tbsp coconut oil
half of vanilla bean
1 tsp of each: cinnamon, nutmeg, cardamom
1 cup oat flour
0.5 cup almond flour
4-5 tbsp almond flakes

First, prepare the apple filling. Core the apples, peel, if you want (I always keep the skin, because I use organic apples) and cut into cubes. To a pot add your apples, berries, 1 tbsp honey, water, all the spices and lemon zest. Stir well. Cook on medium heat until apples softens, do not over cook, though – it is better to leave apples on harder side than to turn them into a mash.

To make the crumble, add remaining honey and coconut oil to a saucepan and heat it on low heat until honey melts and mixes well with the oil. Mix this mixture with oat flour, almond flour and almond flakes. You should get wet sand consistency.

Assemble the crumble: Pour apple filling to your baking dish and spread the crumble evenly on top. Bake it in 180C preheated oven for about 10 mins, or until the top is golden. Serve with vegan ice-cream and tea.
