Magic pumpkin soup

14964243_10211049536900048_1685636217_oI am embracing the pumpkin season this year. Each time I go shopping and I see this pile of nice round orange things I cannot help myself. I usually have a recipe in mind, but we are only two of us in our household, so whole pumpkin goes a long way. Usually, after 1-2 recipes I am done a large slice of this gorgeous thing is lying alone.

In these cases I always use it up in this magic pumpkin soup. Why it is so magic, you may ask, and here’s why:

  1. It is super easy to make
  2. There are only two ingredients (and spices, but you always have them, yes?)
  3. There is a special ingredient that makes it different from all other pumpkin soups
  4. It is super delicious and rich in flavour
  5. It is super healthy and helps with that Halloween candy build up in your body

Let’s talk cinnamon now. Cinnamon in a soup. Cinnamon can lower bad cholesterol level. It also has antifungal and antibacterial properties and is full of antioxidants. Along with incredible taste it makes perfect spice we should use more often.14922918_10211049545420261_1019689727_o

Here is what you need for the Magic soup:

Slice of pumpkin (300-400 grams)
1 cup red lentil
1.5 liter water of vegetable stock
1-2 bay leafs ( I use grounded, so I do not need to remove it in the end)
0.5 tsp black pepper
1 tsp ginger
1 tsp turmeric
0.5 tsp chili pepper (optional)
0.5 tsp cumin
few pinches of salt
1 tsp cinnamon
2 tbsp sunflower or coconut oil
juice of 1/4 of lemon

In a large pot pour the stock (or water) and bring it to boil. Rinse the lentil very well under running water and add it to your stock. If you are boiling your lentil in water, add a pinch of salt and bay leaves. While your lentil is boiling, skin the pumpkin and cut it into cubes. After the lentil is boiling for about 15 mins, add the pumpkin.

Put a pan on medium/low heat, add the oil and all the remaining spices. Let them lightly cook (but not burn!), until you can smell all the amazing flavours. Add these spices, squeeze the slice of lemon to your soup and mix well. At this point you can go ahead and eat the soup or, you can take a blender and smooth the soup completely.I fancy to blend it when I feel like it, so the soups is little thicker, however the taste is the same and it is magical!
